  • Chopped fresh or drained frozen spinach
  • Diced onions
  • Chopped fresh parsley and dill
  • Ricotta and feta cheeses
  • Eggs
  • Salt, pepper and nutmeg
  • Phyllo dough

 

Begin by sauteing your onions in extra virgin olive oil. Add the spinach, parsley, and dill – cook until the spinach cooks down. Add your spices, be careful not to overdo it here, hints are the key to unforgettable spanakopita! Continue cooking until the moisture is almost gone from the pan, remove from heat and set aside to cool. 

While the spinach mixture is cooling, combine your eggs and cheeses in a separate bowl. Place to the side. You can also add your spices here should you choose. Remember, this recipe is meant to be your own!

Butter your pans and start separating the phyllo dough. You’ll want to butter each layer as you go. Layer the ingredients and cook for approximately 25 minutes at 350 degrees.

Begin by mixing all of the ingredients together. Next, using a nonstick pan, press the meat mixture flat, bake until fully cooked. Once cooled, remove the meat and slice into equal pieces. You can also divide the meat equally and pan fry it if you prefer to skip the oven!
